Professor Charles Spence, Fellow of Somerville College, has been quoted in an article in The Times (paywall) which looks at some of the menu design strategies restaurants employ to encourage patrons to spend money.

A study by Professor Spence was also the subject of Manger avec les yeux, an article published by French-language Canadian newspaper La Presse on its website last week. The article looked at how food presentation can affect not just the dining experience but even how food tastes.

Professor Spence’s research receives regular press attention. His next book, The Perfect Meal: The Multisensory Science of Food and Dining, is due to be published in September.
